Cheap and Easy Beef Stew Recipe

If you have a beef with inflation, you’re not alone. It’s becoming frustratingly hard these days to shop for food on a budget. But there is no reason to get ourselves in a stew about it. Oh wait. Maybe there is. 😉 Welcome to another fun edition of cooking with Liquid!

One of the most delicious yet affordable meats to buy is beef made for stewing. It could come from the shank, blade roast, or a number of other cheap cuts for $14/kg or less at your local supermarket. Today we’ll be making a simple beef stew that will make 2 servings from roughly $3 worth of ingredients. Let’s get started. 🙂

 

Beef Stew Recipe for $3

Ingredients:

  • 1 cup (150 grams) each of cubed beef, potatoes, and carrots
  • 2 cups water
  • 2 tsp salt
  • 2 Tbsp ketchup

Cooking Instructions:

  1. Put all the ingredients together in a pot and mix well.
  2. Simmer on medium-low heat for 1 hour with the lid on, stirring once halfway through.

Eh Voila! ? The beef stew is done. Add some freshly ground pepper and bon appétit!

With 5 minutes of preparation and 60 minutes on the stove top this hearty recipe makes for the perfect comfort food for those who have busy schedules in life but can still manage to plan ahead for their meals. 😉

Additional recipe tips:

  • To give the beef an extra depth of flavor, sear the meat in some olive oil over a hot pan before dropping them into the stew.
  • To make the stew more thick try mixing 1 Tbsp of flour into the pot as it cooks.
  • For more complex flavors you can include additional spices such as Worcestershire sauce, ground paprika, or Sriracha sauce.
  • Stephanie O’Dea, a talented author and food blogger, suggests adding some southwest salsa to the stew. This type of salsa contains corn, black beans, onions, tomatoes, and chiles, so you’re essentially getting 5 vegetables in one ingredient.

Finger Marie are really good butter cookies from France. The original name is Doigt Marie and they literally translated the word doigt (finger). Not very original, but who cares since LU makes my favorite cookies 🙂
